Atlantic salmon from Nova Scotia is being offered under the brand AquAdvantage. It is genetically modified and engineered to grow at twice the rate of normal farmed salmon. Here is an article which describes this breakthrough. As usual, with such articles on GMO’s, nothing seems terribly clear about the dangers or lack thereof in applying GMO techniques to our food sources.
Note that the Chef is serving farmed Atlantic salmon in George. In taste, he prefers it to wild salmon. It is not genetically modified.
